Evolve Chocolate Expands — Into Fairhaven with New Cafe
Something new is cookin’ upstairs at Village Books. It’s Bellingham’s newest food adventure — Evolve Chocolate + Cafe! After you’re done browsing the books downstairs, come on up and you’ll find us preparing all sorts of tasty, locally-sourced treats like a Forager Rillette, Chickpea Sweet Potato Bowl, Pork Mole Sub and daily specials!
Of course we’ll make sure you stay hydrated with our housemade sodas and liqueurs, craft cocktails, beer, wine, ciders, and hot coffee…
…and don’t leave without sampling our award-winning truffles, sipping chocolate w/marshmallows, small batch ice cream, and cocktail inspired & apple cider caramels. Grab a good book and let us awaken your taste buds.

WHO ARE THESE FOXY BABES?
We are the Foxes! Chef Christy and Shannon Fox, co-owners and founders of Bellingham’s Evolve Chocolate. We are both chocolate lovers and passionistas about local food and flavors.
Chef Christy comes with 26+ years of professional experience, having started her formal training at the California Culinary Academy, in San Francisco, 1992.
Christy and Shannon are very excited about opening a cafe of their own, bringing passion and love for the whole community.

We are here on Kickstarter to ask for your help in creating this new space. Building a cozy chocolate cafe is a lot of work, but well worth the effort. We hope that you’ll be as excited as we are about this project. Your generous Kickstarter donations will help us:
- Upcycle table tops using Douglas Fir from an 1890’s Fairhaven home
- Plant living green walls with herbs to be used in the kitchen
- Paint the ceiling — chocolate, of course!
- Stock our kitchen with fresh, locally-sourced food
- Purchase oven, refrigeration and espresso machine
- Install a hand-crafted barn door for private event space with a view
